Chicken dinner, help!

  • we're getting so tired of eating the same things. I'm doing a search for chicken recipes but i thought i'd ask also. What is your fav thing to make with chicken that is also filling & easy to make.

  • Rosemary lemon chicken with green beans

    Pour a bag of frozen green beans into baking dish. Lay boneless, skinless chicken breasts on top. Mince up 3 garlic cloves and scatter over chicken and beans. Sprinkle entire dish with salt, pepper, and rosemary. Cut one lemon in half, squeeze one half over chicken, slice the other half thinly and lay slices over chicken. Pour about 1/2 c water into the beans. Cover with foil and bake at 350 for one hour or until juices from the chicken run clear.

    I love this, the lemony sauce stuff in the green beans is so yummy!
  • Hehe--I just posted this in the LC Recipe forum, but I'll pop it on here because it's my favorite thing to do with chicken right now. It tasted like hot wing pizza, without the crust :

    - 5oz baked chicken breast, diced into chunks
    - 1oz Italian cheese blend
    - Put on a plate and drizzle with Frank's Red Hot Buffalo sauce, then nuke in the microwave until it's melty.

    (315 calories: 10g fat / 1g carbs / 51g protein)

    I also frequently use Adobo seasoning on meat to give it some extra flavor--it's pretty salty, but it tastes good and doesn't add carbs or calories.

  • Katie, I think it was your chicken marsala recipe that I tried recently and that was delicious. I don't recall the particulars.
  • I used to make a really good chicken that was stuffed with cream cheese and spinich....

    just take a chicken breast cut about 3/4 way through to have a opening and stuff with frozen or fresh spinich and light or ff cream cheese
    season with salt pepper or seasoning of your choice
    and bake at 350 degrees untill done

    it was very good and filling

  • Here is another one that I love:

    Chicken and Dumplings

    Ingredients:

    1 1/2 lbs chicken breast tenders
    1 tsp olive oil
    1 tbsp light butter
    1 medium russet potato, peeled and diced
    2 medium carrots, peeled and diced or thinly sliced
    1 medium onion, chopped
    1 rib celery, diced
    1 bay leaf, fresh or dried
    Morton Lite Salt® and freshly ground black pepper
    1 tsp salt-free poultry seasoning
    2 tbsp flour
    1 quart reduced-sodium, fat-free chicken broth
    1 (8 oz) small box biscuit mix (preferred brand Jiffy Mix)
    1/2 cup warm water
    Handful flat-leaf parsley, chopped
    1 cup frozen corn




    Preparation:

    Dice tenders into bite size pieces and set aside. Wash hands.
    Place a large pot on stove over medium high heat. Add oil, butter, vegetables and bay leaf and cook 5 minutes, stirring frequently. Season mixture with salt, pepper and poultry seasoning. Add flour to the pan and cook 2 minutes. Stir broth or stock to the pot and bring to a boil. Add chicken to the broth and stir.
    Place biscuit mix in a bowl. Combine with 1/2 cup warm water and parsley. Drop tablespoonfuls of prepared mix into the pot, spacing dumplings evenly. Cover pot tightly and reduce heat to medium low. Steam dumplings 8 to 10 minutes. Remove cover and stir chicken and dumplings to thicken sauce a bit. Stir peas into the pan, remove chicken and dumplings from heat and serve in shallow bowls.

    Makes: 8 servings

  • I make a garlic and pepper chicken stir fry that I like but I warn there is lots of garlic (which is good for you to boot!)

    I cut up boneless chicken breasts into stir fry pieces and mince 4 cloves of garlic. While stir frying the chicken add the garlic and season with black pepper to taste. I like pepper a lot so I tend to make it kinda spicy. I will add sometimes some other spices depending on my mood but usually I stick with the garlic and pepper. I add stir fry veggies in near the end as I usually use frozen so they don't take long. I use a no stick fry pan so all I might do is spray with pam but I have used a tad bit of olive oil as well.

    I serve over a little brown rice and add a dolop of salsa on top. It is yummy!!!
