Pretty peppers and greens

  • On the last Costco/Trader Joe's run I also got: A two pound container of red, yellow and orange sweet mini-peppers for $4.29. I like them because you can use an entire pepper at one time (no left-over parts of a full sized pepper), and they are just beautiful mixed into a stir-fry, grilled or whatever. Plus doesn't the color give special health benefits? In my grocery, a couple of red peppers costs over $4., so this is a good deal.

    At Trader Joe's I got a small container of organic micro greens. These are delicate looking radish sprouts and other tiny greens. These look nice on a salad or on top of a turkey burger and have a very nice flavor. This was $2.39. When a pretentious cookbook says, "serve with a tangle of greens", this is the sort of thing they are talking about.

    I bought these items a week ago. The greens are almost gone, but the remaining are still fine. The peppers are also still crisp and glossy.

    That reminds me of what I am NOT happy about. The big container of organic baby/european lettuce mix that Costco sells. I keep buying it because it is much cheaper than the grocery, but it is always on the way to being spoiled when I purchase it. Part of the problem is that they stuff too much in the container and crush it which accelerates the spoilage. I need to quit wasting my money on this item.
  • I'm going to TJs today after lunch. I'm on a mission for that lite goat cheese mentioned elsewhere. I've bought those peppers before. Since we're having guests tomorrow night, I think I'll get the mini ones and stuff them for appetizers. Hmmm, what stuffing should I use?
  • cbmare, I went to the grocery and bought some Wasw crackers and Laughing Cow Cheese. I had never tried it before. I really do like this for a snack. I got the garlic and herb also!!!
  • I want to find the Wasa sourdough crackers. Right now I'm working on my fat free Ry Krisp.
  • I actually don't like the little peppers very much because it is more effort to cut them up than a large pepper.

    I have found too that the peppers are wonderful roasted in the oven. I also generally cut up peppers for multiple uses so I'll just cut up one large pepper and put the extra in the fridge for other uses or roast them to use later.
  • I added one of the yellow ones to our salad last night. It was delightful! They are sweet! I'm thinking of getting something from the deli, cutting the peppers in half and putting whatever I get on top. We are entertaining this evening and that sounds like it would go quite nicely.
  • These little guys are probably a staple now in our kitchen. They were a HUGE success at the party the other evening. I cut them in half lengthwise and put some chicken salad in them. I didn't have a single one left. Since I bought 2 packages, we've been enjoying them thinly sliced in our salads.

  • I bought the long Sweet red peppers from costco and roasted them in the toaster oven. They are amazing on salads.

    They sure are! I'm glad I got turned on to them.

    We will probably have a get together with boobalah's family later this week. Since some of them are either WW or SB, I think I'll make a mushroom stuffing, no bread, and stuff those puppies again.
  • Well, since you introduced me to this, I have to say, it has become a staple in the kitchen. I slice one up every night for our salad.

    We are making pizza tonight. We are going to roast some of these and put them on it. Since we are doing a veggie pizza, it will be perfect.

    We'll be making the sauce from our own tomatoes that we canned, then boobalah will carmelize some onions and thin slice some red.

    I'm looking forward to our veggie pizza with these adorable and delicious peppers.
  • I roasted, peeled, seeded, and stuffed those little peppers for a party once. They were good, but WAY too much effort (they were stuffed with herb goat cheese.) They are yummy though and not so fiddly when you are only using a few in dinner prep.

    Sadly we are not very near a Trader Joe's anymore, so i just buy the big ones. In fact the other night I sliced up 3 colors of peppers and let them roast in the oven. We ate them in soft tacos with a chicken/black bean filling. They were quite good.
  • We actually found these at our local store in the organic section. I bought the first 3 containers at TJs.

    When we had boobalah's work group over for a dinner before Thanksgiving, I cut them in half and stuffed them with chicken salad. I didn't roast them first. Some of the people who don't normally like peppers loved them. It changed their mind on how peppers should taste. I asked if they'd been eating only green bell peppers. Yep. That was it. We seldom have green bells anymore. The other peppers have so much more flavor and can be roasted.
  • Little peppers stuffed with goat cheese sound TDF. I can see one of those as a tasty garnish for a single serving of salad.

    I love grilled peppers and onions, too. I spray the veggies with pam before grilling. Sometimes I press a few cloves of garlic and sort of roll the peppers around in the mashed garlic. The pam helps the garlic to adhere. Then I have grilled, garlic flavored peppers.
