Spinach with Sweet Sesame Soy

  • Got this recipe from "Japanese Women Don't Get Old or Fat", and I think it's fantastic. Really quick (less than 5 minutes total!), and fairly healthy in terms of a good way to eat your spinach while making it yummy.

    1. Set a pot of water to boil.
    2. Mix 1 tsp reduced-sodium soy sauce, 1/8 tsp sugar, and a sprinkle of sesame seeds. You can toast them first, though I don't find it makes a big difference and just adds more work.
    3. Once the water has boiled, put 2 cups of raw spinach in, and boil for 30 seconds to 1 minute.
    4. Drain the spinach, and mix it with the sauce. Done!

    I can't post the link to NutritionData for the stats because I'm too new to 3FC, but the quick facts are:
    25 cals, 1 g fat, 0 sat/trans fat, 223mg sodium, 4 g carbs, 1 g fiber, 1 g sugar, 2 g protein.
    113% Vitamin A, 28% Vitamin C, 7% Calcium, 10% Iron.

    A bit high in sodium, but no more than chips or something, and as long as you keep the rest of the day low, you'll be fine
  • Great idea to get the greens in for the day, I have a garden fill of silverbeet, I will try with that, sounds tasty and different.
