Breaded Scallops-4 points!!

  • I only cook for myself, so this recipe is for one serving

    Preheat oven to 500.

    I used Poseidon's Choice mini scallops that come in 4oz individual bag. If you're using larger scallops, cut them to about a half inch diameter.

    Marinate 4oz scallops in lowfat butter milk at room temp for about 15-20 minutes.

    Coat using around 1/8 cup breadcrumbs.

    Arrange in well coated pan and top with garlic powder and a little bit of parmesan.

    Bake around 4 minutes each side and they are done!!

    I made these tonight, after modifying a different recipe. I made home-made tartar using Lowfat mayo and chopped pickles, but they were good enough on their own!
