Peppermint Fudge Cake

  • This is a really great recipe courtesy of my Cooking for IBS cookbook by Heather Van Vourus.

    I was making it this afternoon and figured it was definitley worth sharing..

    Peppermint Fudge Cake

    Preheat oven to 325 degrees celsius and spray a 10" bundt pan (I just used a regular cake pan)

    Into a large bowl Sift

    2 cups of flour
    2tsp baking soda
    6 tbsp cocoa
    1 tbsp cornstarch
    1 cup sugar
    1/2 tsp salt

    mix together

    In a separate bowl mix
    1 3/4 cups applesauce
    1/4 canola oil
    1tbsp vanilla
    1tbsp peppermint extract

    mix together and add to dry mix..mix until just combined and pour into pan

    Bake for about 50-60 mins

    Mocha Mint Glaze

    1/2 cup icing sugar
    2 tbsp cocoa powder
    1/2 tsp decaffeinated instant coffe
    1 1/2 tbsp water, soy milk or rice milk
    1/2 tsp peppermint extract

    It is really yummy....I would rather eat this than a regular cake..it's tastey and better for you
