Parker Family Zucchini Soup

  • Zucchini (depending on how much you like to make- we use at least 8), sliced
    1 onion, diced
    3-4 cloves of garlic, sliced
    2t salt
    pepper to taste
    chicken broth (again, depending on how much you make)
    1t olive oil

    Add veggies, onion and garlic with oil, sale and pepper in large pan. Sweat mixture until translucent and very very tender. Add in chicken broth and simmer, covered until super tender. Then either put mixture (warm/hot) into blender in batches OR use your stick blender and blend until very smooth. This is a smooth soup-- no lumps. We usually add a dollop of sour cream, but that isn't really needed because this is a super tasty soup!
