I was wondering if you all could give me some cooking tips on how to cook chicken without it drying out. I purchased some of the frozen precooked chicken breast that you can microwave and they just get so dry.
Put a little tiny bit of water in with them and seal them with a lid or wrap when you microwave. Do not overheat them (they're already cooked). If your doing the whole breast (not the strips) and the middle is still cold you can cut it in half and put the cold insides facing out to finish cooking.

For baking-
I wrap each piece in tin foil. It helps keep the marinade contained, and helps it soak in its own juice. YUMMY!
Well, you did specify microwaving. DON'T wrap it in foil if you're going to microwave it!!!!!
Put it on a microwaveable plate and cover with waxed paper. Follow package directions, but if your microwave is overcooking in that amount of time, power it down to 80%.
Here's how I do it for chicken breasts that haven't been previously cooked (using the waxed paper and the plate): Cook on High for 3 minutes, then take it out, flip it over, move pieces in the center to the outside of the plate and those on the outside to the center, and cook for another minute or two, depending on how done it looked. Basically, to keep it from drying out and toughening up, just don't overcook it.
