What to do with French-cut green beans?

  • I was in the mood for some French-cut green beans, so I bought a can of them. Well, one serving took care of the craving, but I'd like to find an appealing way to use up the rest of the can.

    I won't eat mushrooms, so the classic green bean casserole is out. Adding almonds to them isn't enough to make them appetizing, because it's mostly still beans.

    Anyone have any non-mushroomy casserole ideas? Or any other ways to blend them in with other foods?

  • If you want the classic casserole but don't like mushrooms couldn't you replace the cream of mushroom soup with cream of chicken or cream of celery?
  • Add them to soup. I like to make veggie beef soup out of leftovers from the fridge. its great in that. Also, if you want the casserole, you can put fat free gravy in it instead of mushrooms. My brother is severly lactose intolerant, so we use lactose free gravy in it instead of cream of mushroom. It really isn't bad.
  • My favorite thing is to mix green beans with Trader Joe's red pepper sauce, top with fat-free feta cheese, and stick it in the microwave to "melt" the cheese a bit. Yum!
  • Some crumbled turkey bacon and slighty cooked tomato(chopped),adds a nice flavor to green beans.
  • Chicken and Cashews
    1/2 c water
    3 tb light soy sauce
    3 tb sherry (I didn't have any so I used white wine)
    1 tb cornstarch
    1 teaspoon sugar ( I used honey)
    1/2 teaspoon ground ginger
    1 pound skinless boneless chicken breast halves cut in to bit size pieces
    2 tb canola oil (I used toasted seasame oil)
    1/4 teaspoon hot sauce
    1/2 pound fresh green beans cut into 2 inch pieces (but you could use canned, just drain them first)
    2 ounces cashews
    2 cups cooked brown rice

    combine first 6 ingrediencts (water through ginger) in a shallow dish or large heavy duty zip top bag; add chicken. cover or seal and chill 15 mins. Remove chicken from marinade, reserving marinade. Heat oil and hot sauce in large skillet or wok over medium high heat 2 minutes. Add chicken and stir fry 2 minutes. Add reserved marinade; cover and cook over medium low heat 2 muntes until chicken is done. Add green beans and stir fry 1 minute. Stir in cashews. Serve over hot rice. Yield 4 servings.
