Little Vanilla Cakes

    Ingredients:

    1 ½ sticks unsalted butter
    1 cup Splenda
    3 eggs
    1 1/2 tsp vanilla extract
    1 1/2 cups all purpose flour
    1 tsp baking powder
    3/4 cup skim milk
    2 cups fresh whole strawberries


    Preparation:

    Preheat oven to 350.
    Grease 12 cup muffin pan.
    Cream butter and sugar with electric mixer until pale.
    Add eggs, one at a time, then beat in vanilla.
    Sift flour and baking powder into mixture, alternating with milk, until well combined.
    Fill pans 3/4 full and bake for 20-25 minutes until lightly golden.
    Set aside to cool.
    Serve with fresh strawberries.


    Makes: 12 muffins

    Serving size: 1 muffin with strawberries (size according to plan)
