I am looking for an old recipe for cheesescake. I do remember it was made with geleatin, ricotta cheese and pineappe. Does anyone have this recipe? Also I would like a recipe for muffins and let me know their points.
There are a lot of muffin recipes in the breads section of the recipe threads.
I have the old WW cookbooks so I'll try to find the cheesecake recipe for you.
Here is a cheesecake recipe from the original WW book written by Jean Neiditch
18 oz. cottage or ricotta cheese
1/2 tsp. nutmeg
1/4 tsp. cinnamon
1/2 tsp. rum flavoring
1/2 tsp. vanilla
2 pks. sweetener
2 eggs, separated
Beat all ingredients, except egg whites at high speed with electric beater until smooth. Do not underbeat. Fold in stiffly beaten egg whites. Place in 7 inch pie pan. Set on bottom rack of broiler rack. Broiil 8 minutes or until top is golden brown. Fruit may be placed on top before serving. Makes 4 portions.
I don't know what the points are = you would have to figure out the cheese. I found that when I made this years ago, it tasted much better with the ricotta.
