soups wanted

  • Hello all, I am new here, but not new to weightloss. What I am in the mood for is some good home made soups, what can you offer, recipes PLEASE! I like crockpot ideas as well as stovetop. Its that time of year again for warm yummy soups. Thanks
  • This is more of a stew, but I just made it last night, and it's the perfect warm, wintery recipe:

    I like to do this all in one fairly deep saucepan, so you're not ransferring between pots and pans.

    Ingredients:
    1 tbsp olive oil
    1 med yellow onion, chopped
    3/4 lb hot italian sausage, removed from the casing (use turkey sausage to cut down on fat)
    2 cloves garlic, minced
    2 15 oz cans of white beans, rinsed
    2 bunches chard, chopped
    1 cup chicken broth
    1 1/2 tsp red wine vinegar
    1/4 cup parmasean

    -heat olive oil over med heat. Add onion and cook about 4-5 min (until soft, but not too dark)
    -add sausage, increase heat to med-high. Cook for about 6 min, stirring and breaking up the sausages into smaller chunks as it cooks
    -add garlic, beans, chard, chicken broth, and cover. Cook about 8 min. (Stir a few times to wilt the chard)
    -Remove from heat and add vinegar
    -Dish up and top with a sprinkle of parmasean.
    This made enough for two of us to eat it two nights in a row and have a bit leftover for my lunch - it's very filling!

  • Chicken Hollendaise
    This is one of my favorites in the crockpot

    4 boneless/skinless chicken breasts
    1 cup ff chicken broth
    1 package hollendaise sauce mix
    1 8 oz cube of ff cream cheese

    Mix the chicken broth and dry hollendaise sauce mix. Pour over chicken in crock pot. Cook on low 5-6 hours or until chicken is done. Have the ff cream cheese at room temp., add to crock pot and heat until melted.

    Serve over noodles - great tasting and easy to fix!

  • How bout some old fashioned chicken soup?

    I chicken about 3 lbs. 1/4'd and skin removed
    1 large onion, peel it and keep it whole
    2 medium parsnip,peeled
    4 stalks of celery

    Put this all in a 8 qt pot and cover it with water til almost the top. Bring to a boil. When it boils remove the scum from the top wiith a large spoon. Add about 3 tsps. salt, 1 tsp. pepper, 3 tsps. garlic powder and 3 tsps. onion powder. Cover it and let it simmer for about an hour.

    When the hour is up put in 5 sliced carrots and a bunch of dill that you rinsed well. And that's it. It freezes very well. I freeze it in quart sized containers. When you serve it again you can add some skinny noodles.

    You can also add a sweet potato to it, about half way through cooking depending on how big the potato is.
  • Vee's Beef Stew
    1 lb beef (your choice, i use whatever is handy) cubed
    1 small onion
    2 sticks celery
    handful or two of carrots
    1 bay leaf
    1 sundried tomato
    1 can beef consome
    1 veggie boullion cube (or whatever kind suits)
    any leftover veggies you want to add
    1 clove garlic
    1/2tsp marjoram
    1/4 - 1/2 tsp sage
    little bit of herb de provence if you have it
    dash or two of allspice
    "liberal" amount of red wine

    I usually brown off/cook the beef with the onion and garlic and then just dump everything else in the pot. When its close to being done (I let mine simmer for at least 30 min or so) I add noodles. You can add any veggies you want to it...I use it to clean out the fridge.
  • I love soups. This is a very low calorie, one of my favs soups:
    2-3 Cups of chopped veggies ( I use zucchini, broccoli, green beans, carrots, peas and potatoes)
    1 Can of chopped tomatoes
    about 6-8 cups of water, depending on how you like it
    2 cubes vegetable boullion
    I love to add lots of pepper to it as well.
    Boil all ingredients together until veggies are just tender, enjoy with a squeeze of lemon
