This has a lot of ingredient but it is very easy to make. You can increase the spices to fit your own taste if desired. dh loved this one.
1 can red beans
1 can black beans
1/2 c chopped onion
1/4 c chopped green bell pepper
1/4 t minced garlic
1/4 t marjoram
1/4 t sage
1/4 t basil
1/4 t thyme
1/4 t dried mustard
1/4 t crushed black pepper
1 t wine vinegar
1 t lemon juice
Salt to taste
1 small bay leaf
2/3 c okra (fresh or frozen)
Louisiana hot sauce (to taste)
Lightly saute onions, green pepper and garlic in 1 Tbl. olive oil. Combine bean, sauted vegetables, and spices together except for the bay leaf. Simmer 15 minutes. Add okra and bay leaf. Simmer until thickened (approx 15 minutes) Remove bay leaf. Serve with prepared brown rice. Add Louisiana hot sauce to taste.
This is so perfect! All a family needs to do is make an extra pot of white (jasmine is best!) rice! Thanks
Sounds yummers! I will try it this week!
Excellent!
I made this last night and it was GREAT! As I was cooking the bean mixture, I noticed it reduced down quite a bit, so I added some vegetable stock to it. Don't let the list of ingredients keep you from trying it. Most of it is just herbs and spices - it is so easy to prepare!
Instead of keeping the beans and rice separate, I added them together - both my boyfriend and I loved it. Delicious!
tasty meal
I made this over the weekend, and it was wonderful!! It will definitely be on of my staple meals!
I made this last night and it was GREAT my boyfriend and I loved it. I added more onion and green bell pepper to the recipe....also, I rinsed my beans out in a colander before adding to the pan to rinse off any preservatives and extra salt. Then I just added some water to the pan while everything was cooking and it was still awesome. The only thing I noticed was that after about 10-15min the beans were starting the burst so I stopped cooking after that. I am definitely making this again. It was so good!
I agree this was very tasty and filling. Sometimes I ate it with or without rice.
