P1: Ranchero Soup

  • 1 large onion, quartered
    3 celery ribs
    1 medium zucchini, halved lengthwise, I used 2
    1 large red pepper, quartered and seeded
    1 poblano pepper, quartered and seeded
    1 tablespoon olive oil , I used 1T.
    2 cans (14 1/2 ounces each) diced tomatooes, undrained
    2 cans (14 1/2 ounces each) vegetable broth
    1 cup frozen sliced carrots
    1 cup cooked rice
    1/2 teaspoon lemon-pepper seasoning.

    Brush the onion, cleery , zucchini, and peppers with oil. I used george
    forman grill. for about seven minutes set aside. Place pepper in a bowl and let aside.
    In a large sauepan, combine the tomatoes, broth and carrots. Bring to a boil.
    Reduce heat, stir in grilled veggies, rice nd lemon-pepper heat through
    I sprinkled cajan seasoning on veggies while grilling .
    1 1/4 cups equal 99 cal.
