I have split veggies since I've been doing this - but Cassi pointed out that in the LA Cookbook, when they use a variety of veggies - they count them individually. For instance - if I use 1 T of sweet peppers and 1 T of onions in an omelet - I used to count them as 1/2V, but in the cookbook, they would be counted as 2V, but the portion is not limited because of it.
DH's counselor said to list them for instance, a salad is 3c lettuce 1V, 1/2c green peppers 1V and 1/2c Cauliflower 1V. I'm still getting 2 veggie portions, but I'm letting them know what all the veggies were. That's what they do in the cookbook and his counselor approves of it as well.
Did I just muddy up the waters or did I help?!?
