1 small can diced peaches diced (50 cal version) I pureed these in a blinder. ( I should have just used a fresh peach, but lol you use what you have in house)
1/2 cup eggbeaters
1/4 cup 1% milk
1 tsp baking powder
1 tablespoon flour
2 packets instant oat meal
1 tbsp Cinnamon
1 tbsp imitation vanilla extract
Add all ingredients together in a bowl. I heated mine in the microwave for 30 seconds to have the oatmeal absorb some of the liquid and thicken up.
I then made 3 good sized pancakes and cooked them golden brown. The recipe will make 6 pancakes or 2 servings. The calories listed below are for 1 serving.
I put 1/4 cup of sugar free syrup and some smart squeeze on these, added a cup of cut strawberries on the side with a 1/2 cup of milk. I had a super breakfast for 315 calories!!!
Now, I kind of made this up on the fly - so use at your own risk - but I thought they were fantastic. If anyone plays around with this and improves the recipe, please let me know!
