Miss your muffins?

  • I have to have a muffin every now and then, but they are all so high fat / cal. I was shopping in a Trader Joe's last weekend when I discovered something called "Zen Fiber Cakes". They look like muffins, but they are a bit denser. I think I found my new muffin.

    Each muffin has 80 cals, 1.5g fat, and 13g of fiber. <---yes, 13!
    (I had to look twice too)

    I figured the point value at 1 per muffin

    the ingredients list : Bran, blueberries, white grape juice, sodium bicarbonate, and salt.

    If you try one with the premise that they are what they are (as in - not exactly a muffin. You might find them quite tasty. They are sweeter than they sound, have a good texture (maybe a little dry - so have one with coffee) and very filling. I've also seen apple cranberry Zen Cakes, but I'm allergic to apples now

    EWE! Tried them ...way to dry. Even with coffee, they got stuck in my throat ...not a fan.

    I just made some Chocolate Cherry muffins that you might want to give a try. They're high fiber, moist and yummy ...and very easy ...here's the recipe. I hope you enjoy them.



    Chocolate Cherry Muffins

    1 box No Pudge! Original Fudge Brownie Mix or other fat-free brownie mix
    1 can Light Cherry Pie Filling
    1 cup wheat bran
    1/4 cup 1% milk

    Preheat oven to 350 degrees. In a bowl, mix all of the ingredients together. Place batter into muffin tins lined with paper or sprayed with nonstick spray. Bake for about 30 minutes, or until done. Makes 12 muffins.
