Yummy Recipes for Featherweights

  • Hey everyone! I have an amazing recipe for Chocolate Chip Blondies I got from the WW website, thought you guys might like it (it's only 3 pts. per blondie!)

    2 Cups All Purpose Flour
    2 tsp Baking Powder
    1/2 tsp Salt
    1 1/2 Cup Unpacked Brown Sugar (you can use any kind, I use golden brown)
    6 Tbsp LIGHT Butter (I Can't Believe It's Not Butter for me!)
    2 LARGE Egg Whites
    1 tsp Vanilla Extract (it's really worth getting real- not immitation- vanilla extract)
    3/4 Cup Mini Chocolate Chips
    1/3 Cup Water


    Method

    Preheat Oven to 350 degrees
    In a small bowl, combine flour, baking powder, and salt (*now known as "bowl of dry stuff)
    In a large bowl (or stand mixer, if you have one) beat brown sugar and butter until "fluffy" (I just do it until it looks really well combined)
    Add egg whites and vanilla- mix until incorporated
    Gradually beat in dry stuff, alternating with water (I do this by thirds- one third of dry stuff, some water, second third dry stuff, water...)
    Spread batter into foil-lined 9x13 inch baking pan
    Bake until golden- 20-25 minutes (or until it's done, when you insert a toothpick into the middle and it comes out devoid pf gunk...but chocolate is fine)
    Cool on wire rack (this isn't neccessary, I just put it on top of the stove burners-when they're off- and cool it there)
    Remove Foil
    Cut into 24 2-inch pieces

    I don't suppose the running away burned enough calories for a cake did it?
  • y'know, since they're only 3 points for a 2 inch bar, i'd say that each serving has about 150 calories...which isn't bad at all if you're craving something yummy for dessert. if all else fails, whenever i make a batch i keep a small plate for my family, and then give the rest away to friends. that way, everyone gets to enjoy!
