Jello Cheesecake

    Serves 8

    Ingredients:
    1 package sugar free jello mix (any flavour - 4 serving size)
    2/3 cup hot water
    1 cup low fat cottage cheese
    8 ounces fat free cream cheese
    2 cups Cool Whip Lite
    1 reduced fat Ready crust (graham)

    Blend Jell-O and hot water together in a blender.

    Add cream cheese and cottage cheese and continue to blend until smooth.

    Put in medium size bowl and whisk in Cool Whip.

    Spoon into prepared crust. Cool 4 hours or more.

    a few ideas:

    Use orange flavour jello and decorate pie with canned mandarin oranges;

    use strawberry jello and decorate pie top with sliced strawberries;

    use peach jello with sliced peaches for topping the pie;

    use cherry jello and decorate pie with canned, pitted cherries.
  • Love this recipe but I thought it not quite sweet enough so I added 3 Tb Scoopable Spenda and it was perfecto! And if you omit the graham its great for low carb and phase 2 SB.
