Delicious Strawberry Salad

  • 1 quart (? whatever they come in!) fresh strawberries
    1 head Romaine or other leafy green
    1/4 cup chopped, toasted almonds or pecans
    2-3 ounces feta cheese

    dressing:
    SF strawberry jam
    balsamic vinegar
    olive oil

    Slice the strawberries. Toss together Romaine, strawberries, crumbled feta, and nuts. For the dressing, whisk together a good amount jam with balsamic vinegar. Season with salt and pepper. Whisk in olive oil to taste. (I found that this doesn't need much oil at all.)

    Pour dressing over salad mixture. This is delicious. We practically licked the bowl clean when we made it. Based on a Rachael Ray recipe. She suggested adapting it for whatever fruit you want--like using orange slices and orange marmalade for the dressing.

  • Hey Jessie, this sounds similar the salad we make:

    I use 1 bag of baby lettuce/spinach...I think it says spring lettuce mix
    sliced strawberries
    part skim mozzarella
    sunflower seeds or any type of nuts you like (my favorite are the soy nuts and sunflower seeds)

    and top with raspberry viniegrette (? spelling)

    It is mighty tastey and we love it as well, I'll give your dressing a try, I've never tried to make my own, it sounds really easy!!!
