Orange-Dijon Glazed Ham

  • 1 4 to 6lb bone-in low-sodium ham
    2/3 c maple syrup
    1/3 c dijon or deli-style mustard
    1/3 c orange juice
    1/2 c sugar-free organge marmalade

    (they list orange zest in the directions, but not in the ingredients - have no idea what to start with - maybe 1 tbsp?)

    Preheat oven to 425 degrees. Trim any excess fat from ham; score the outside of the meat in a diamond pattern

    Place in a baking pan on a rack coated with nonfat cooking spray

    Combine maple syrup, dijon mustard, orange zest(not in ingredients!), and orange juice ina bowl; whisk vigorusly. Brush ham generously with glaze. Bake at 425 for 5 to 10 minutes, then reduce temperature to 325. Cook for approximately one hour. Baste ham with glaze every 15 minutes until warmed thru.

    Remove from oven and allow to rest 5 to 10 minutes before serving

    In a small saucepan, pour in remaining laze. Add marmalade and stir to combine; heat over medium-low until slightly thickened, or to desired ocnsistency. Serve with sliced ham if desired.

    Makes approx 16 servings.
    Serving size - 3 or 5 oz ooked ham according to plan with tbsp sauce.
