I changed my mind on the roast chicken with alfredo sauce. Went with chicken breasts marinated for about 2 hours in Teriaki sauce and then baked in the sauce. Side of asparagus. (Water, too.)

Chips & salsa are one of my favorite snacks, too. A friend suggested using celery sticks in place of the chips. (Ugh!
Just not the same at all!) I do like putting a little (emphasis on little) bit of salsa on my chicken or beef patties. Add a dollop of sour cream and a sprinkle of fresh, chopped chives or scallions and you have one very tasty, low-carb dish! 



We were raised on a trucker's salary (one who kept getting layed-off every 2-3 years
). My folks did their best but sometimes things like chicken, eggs, and peanut butter where all they could afford for protein sources for weeks at a time. You'd be amazed what you can prepare with these items (no, not all together) when you get sick of eating them plain. To this day Mom is constantly checking the grocery store for new spices or herbs to use in her cooking. More so in the last 3 years since my dad was diagnosed with type II diabetes.
