Thai with Spicy Peanut Sauce

  • This is wonderful! It's supposed to make 6 servings but I think it makes way too much for only 6 servings.

    1 lb whole wheat spaghetti
    1 tsp. oil (I used extra virgin olive oil)
    1 bunch green onions cut into 1/2 inch pieces
    1 lb chicken breast (I omitted this)
    1 tsp. ground ginger
    3 cloves garlic, pressed
    1 bag broccoli slaw blend
    1 can chicken broth
    1/4 cup stir fry sauce
    1/4 cup natural peanut butter
    a few drops hot pepper sauce

    Cook spaghetti. Heat oil in a large skillet, cook the green onions and remove from the skillet. Cook chicken, ginger, and garlic. Stir in remaining ingrediants and heat to boiling. Reduce heat and simmer 6-8 minutes or until sauce thickens. Add cooked spaghetti and serve.

    Made this tonight using only 1/2 box of the spaghetti and all of the sauce ingredients .. and it was absolutely deeeelicious!!! I used a rotisserie chicken from the grocery store, red pepper flakes, and that worked out just great!! Thanks for a keeper recipe!! Loved it!
