I need a good Fat Free Apple Cinnamon Muffin Recipe

  • Hi! My grocery store makes a great fat free apple cinnomon muffin but I'm getting tired of having to be there on the "right" days to get them. I can make my own if I had a good recipe. Does anyone have one? The only thing I ask is that they not exceed 4 points for a 4 oz muffin. Please email me the recipe at [email protected]. Thanks!

  • Check out the W W Bread and Grain thread. I just pulled up my favorite Cinnamon Bran Muffins. They call for 1/4 c of raisins, I use the golden ones, but you could try 1/4 c of cut up dried apple or take a peeled tart apple and try that. This recipe already has apple butter in it. Maybe another option would be chunky apple sauce. I eat these every day.

Also check out my new favorite in the same thread. 1 pt Chocolate Muffins. So easy.

I don't follow the WW plan so I can't tell you the point value in these. But at least this should give you some starting point.

Heat oven to 325° F. Lightly oil muffin tin. Peel and core apples and chop coarsely. Set aside.

In a separate bowl, sift together pastry flour, white flour, oat bran, baking soda, cinnamon, and nutmeg.

Add thawed apple-juice concentrate, chopped apples, and enough water to make a light batter.
