St Patty's low carb desserts

  • Hello, all! I'm planning my Sy. patty's Day party menu and thought I'd share:

I found an article on the Prevention magazine website titled, "Luscious Low-Carb Desserts". I am making the cheesecake with Creme de Menthe sauce (for everyone else) and adding a "wee nip" of whiskey to the espresso in the Tiramisu to make it Irish Coffee.

Thought you may want to try it!
  • yes, that sounds like something I'd love to try in the future. Can you share the recipe?
  • I'm not brave enough to venture into desserts yet. But sounds YUMMY
  • I tried making a low carb cheesecake with a South Beach recipe and didn't care for it. Atkins' web site has a recipe for coconut macaroons I want to try.
  • That sounds yummy! I'm not aloud deserts yet though cuz I'm still in induction, but enjoy :P
  • Daydreamer, it probably is best to forego dessert until the sugar cravings are gone, but there are a few things you can have on induction. You can have SF jello, or mock danish
    MOCK DANISH
    2 ounces cream cheese
    1 egg
    2 teaspoons granulated Splenda
    1/2 teaspoon vanilla
    Pinch of cinnamon
In a small, microwaveable bowl, soften the cream cheese on HIGH 30 seconds. Beat well with a fork until creamy. Add the egg and beat very well until creamy; mix in remaining ingredients. Use a small rubber spatula to scrape down the sides of the bowl so that all the batter is in the bottom. Microwave on HIGH 30 seconds; rotate bowl (do not stir) and cook another 30 seconds. If center still looks too runny, cook another 30 seconds. May take up to 2 1/2 minutes total, depending on your microwave. Center should be a bit soft for the danish filling effect. Run a small rubber spatula around the danish, then under it to release from bowl. Transfer to a small plate. Cool until just warm or cool completely before eating.

There's no mistaking this for the real thing, but it tastes pretty good.
