    what is polenta?

    Thanks!
  • Emily, polenta is cornmeal and water. There are a few recipes here for different variations, but basically here's what I do: take 3 parts of boiling water to 1 part of cornmeal. Stir it a little and it'll thicken up and make a sort of dough. Then drop it by spoonfuls onto a griddle or nonstick skillet and make something that looks like pancakes. You can grease a spatula and smoosh it down. Cook on one side, flip it over and cook the other side, and enjoy! I usually add chopped jalapenos or garlic ... something to trick it up. It's very good with black or pinto beans. You can even make a crust for a tamale pie. Check out the recipe section and do a search on "polenta" or "corn pone".
  • Oh and you can also buy commercial polenta. It comes in a roll like sausage and you just cook it. I prefer to make my own fresh.
  • Thanks - I will have to try that
