Thai Noodle Shrimp Salad - points???

  • I need your help in figuring points for this recipe ...it sounds too good to pass up! I roughly tried to figure it out, just using my blonde brain, WW points finder and a calculator, and came up with 8 points per serving (without using the peanuts for garnish) ...can anyone please tell me how close I am? Here's the recipe:

    Thai Noodle Shrimp Salad
    Serves 6

    1 lb package of Trader Joes Imported Fettuccine
    (8 servings per package ...1 serving = 210 cal., 1 g. fat, 2 g. fiber

    3/4 cup Trader Joes Hoisin Sauce (1 Tbsp. = 40 cal., 0 fat, 0 fiber)

    1/2 cup Trader Joes Peanut Sauce (2 Tbsp = 70 cal, 3 g. fat, 1 g. fiber)

    1 lb Trader Joes Pre-cooked Large Shrimp (50-70 to a lb) thawed and rinsed
    1/2 cup sliced green onions
    1/3 cup chopped fresh cilantro
    1/2 cup chopped salted peanuts
    2 fresh limes cut into wedges

    Cook fettuccine according to directions on package
    Immediately drain and put in ice water bath to chill
    Drain well
    Blend together the Hoisin and Peanut sauces
    Toss together the green onions, cilantro and shrimp
    Add Hoisin peanut dressing and blend
    Add to the cooled and drained pasta
    Toss well
    Chill for 30 minutes
    Pass lime wedges and chopped peanuts with salad

    Comes to about 10 points per serving (took the whole recipe and divided by 6 -- even tho the pasta is for 8 servings... here's how it worked out:

    Pasta 32 points
    Shrimp 8
    Hoisin 12
    Peanut S 8
    Peanuts: I calculated it based on ONE OUNCE not 1/2 cup and that's 4 points. Everything else is free. 32+8+12+8+4 = 64 points divided by 6 = 10.6 points.

    Hope this helps. The hoisin sauce is 1 point per tablespoon, and the recipe calls for 12 tablespoons (3/4 cup). The Peanut sauce is 1 point per tbls and the recipe calls for 8 tbls (1/2 cup). The shrimp is 1 pt for 2 ounces (16 oz = 1lb). And, the pasta comes to 4 points per serving based on 8 servings in the lb, but works out to 5 pts per serving if only 6.... there you have it.
