Is this recipe okay for Sonoma?

  • Hi there,
    I'm new and in need of some soup because I'm sick. I just put together the soup below and am hoping someone on here can tell me if it is good for this diet...and if not then help me Sonoma-ize it.

    1 Tbsp EVOO
    3 cloves garlic
    1/4 cup chopped white onion
    2 cans chicken broth
    1 cup water
    1/2 cup canned tomatoes with juice
    6oz chicken breast
    1/2 cup chickpeas
    1/2 cup green beans
    3 stalks asparagus
    1/2 cup mushrooms
    garlic salt & pepper to taste
    dried parsley to taste
    red pepper flaks to taste

    put olive oil in pan, add onions & garlic and saute for a few minutes. Add chicken broth and tomatoes, bring to a boil. Add garlic salt, pepper, red pepper flakes & parsley. Add chicken and boil till just cooked through. Remove chicken and using an emulsifying hand blender blend the broth (because I like it a bit thicker). Cut the chicken in chunks, add it back to the broth and add the remaining ingredients. Check the taste to make sure you've got it the way you like it and add seasonings if you want.

    Does that sound okay to y'all?
  • It is just fine. Might I recommend adding some whole grain, such as bulgur wheat, brown rice, barley or whole wheat pasta to make this a complete meal?

  • this actually made about 3 servings. I had one for lunch, and then tonight I'll add 1/2 cup of brown rice to it for dinner.
