hello! I use extra firm in making Mabo Tofu. You can find the mix in an asian grocery store. You add meat to it (or imitation, if you want) and just pour the mix over it. Its very good, though I don't know about nutrition info...its been a while since I had it last.
Other thing, I'm a little wierd, but regular/firm tofu with soysauce and A-1 steak sauce is really good. Sometimes I eat it with ranch dressing, but that's more of an aquired taste.
