Robin's Quiche

  • Quiche (crustless)

    4 eggs
    1 tub (16oz)cottage cheese
    2 cups grated cheddar cheese or cheese of your preferance
    10 oz finely chopped broccoli, or thawed and drained spinach


    for variety, add 4 slices crumbled cooked bacon to the broccoli
    or, 1 cup prefried mushroom slices to the spinach

    toss in a couple tblsps of ground flax seed if you have it for extra fibre...

    mix well, pour into a pie plate

    then bake at 325 for approx 1 hour. (edited to change oven temp)

    I love that you can take the basic recipe, and do your thing with it...toss stuff in......and I find it tastes so much better the next day!
