Thanksgiving

  • Im planning a Thanksgiving dinner with our best friends, before the actual holiday andI have to start thinking of some good OP things to make. Turkey and potatoes are easy, but what about other side dishes that are festive and yummy? Any ideas? I was thinking apple pie for dessert, if I even have any..there was a recipe in the handout at the center.

    Also, any guesses what a serving of mashed potatoes (made with lo sod. chicken broth or ff half and half and i cant believe its not butter spray) would be? 1/2c, 1/3 c??? My center was clueless.

    I also asked them TWICE about pumpkin...they said it would be a veg but not sure of the serving size. I wanted to make some pumpkin fluff (classic WW recipe) and maybe make them into tarts for the other guests. SS FF pudding mix isnt allowed on the regular program though, right?

    What about experimenting with the LA pudding (isn't there vanilla?) or the vanilla lite drink mix-whipping it up real good in the blender with pumpkin and splenda? maybe with a little ff cool whip? Maybe I'll try it at home and let you know. I have everything but the cool whip.
  • I picked up a recipe from the center last week for "Crustless Pumpkin Pie". I haven't tried it yet, but it sounds really good...

    Crustless Pumpkin Pie - 1 starch and 1/2 dairy

    1 (15oz) can pumpkin
    1 (12oz) can evaporated skim milk
    1/2 c. egg substitute (equivilant to 2 eggs)
    2 egg whites
    artificial sweetener (equivilant to 3/4c. sugar)
    1 tsp. ground cinnamon
    1/4 tsp. allspice
    1/4 tsp. ground ginger
    1/3 tsp. salt
    1/3 c. reduced fat graham cracker crumbs

    In a mixing bowl, combine pumpkin, milk, egg substitue, egg whites and sweetener. Beat until smooth. Add spices and salt. Beat until well blended. Stir in graham crumbs. Pour into a 9" pie plate that has been coated with non-stick cooking spray. Bake at 325 degrees for 50-55 minutes or until knife inserted in center comes out clean. Serving size 1/8 slice of pie.

  • About pumpkin in general - I'd count it as a starch - like a winter squash - if you're going to have it as just a . . . pumpkin!

  • I learned from another breeder that canned pumpkin not only clears up diarheah, but also sorts out constipation in dogs. Funny how it does both. I wonder what is in pumpkin that does that? Too bad your dog's tummy is so tender. Science Diet is so expensive! Good for you that you found something that works though.
  • Gotcha! We tried Eukanuba a couple of years ago, and all of my chihauhau's hair fell out. We went back to Pedigree (much cheaper) and now she is fine. We go through about 100 lbs of dog food per month. I wish one bag lasted that long!
  • Just an FYI...I made the crustless pumpkin pie and it was awesome! The family wants me to make 2 for Thanksgiving. I highly recommend it.

    My center put out a little sheet listing equivalents for some common Thanksgiving foods:

    1/2 cup mashed potatoes, sweet potatoes, or squash = 1 starch
    1/3 cup stuffing = 1 starch and 1 fat
    Pumpkin pie, 1/8 pie = 1 starch and 1 fat (my maintenance guide says that this should be 2 starch instead of 1)
    Apple or other fruit pie, 1/8 pie = 1 fruit, 2 starch, 1 fat
    Lite eggnog = 1 starch, 1 dairy, 1 fat

    The sheet does say that most of these options are special for the holidays, and you shouldn't build them into your daily menus.
