I've been making granola since I was 12. I love it!! I don't think raisins are SBD approved so I left them out but if you're in the mood to splurge, they are really good. I don't make it often since I could eat it 24/7 but I've found that 1/4 cup over yogurt gives a good "granola fix" without overdoing it too much.
4 C Old fashioned oats
1 C sliced almonds
1/2 C unsweetened shredded coconut
1/2 T cinnamon
1/4 C smart balance
1/2 C sf maple syrup (I use Log Cabin)
1/4 C canola oil
1/2 C splenda (or to taste, I like sweet granola)
1 T maple extract
pinch of salt
Preheat oven to 300. Toss first four ingredients in a very large bowl. In a saucepan, combine remaining ingredients and melt together over medium heat. bring to a soft boil then pour over the oat mixture. Toss very well to mix together. Make sure all the oat mixture is coated. Spread mixture on a cookie sheet, crunching with your hands to make clumps. Bake for about an hour, stirring once halfway through.
8 servings. 290 calories per serving.
