Mayo and Cream Cheese

    I've noticed on this board that people are really concerned about cream cheese and mayo during phase 1. so my suggeestin...mkae your own, using tofu. its a lot healthier and you really don't taste the difference, especially when your using the mayo/cream cheese in something else (like cheesecakes)

    so here are two recipes i use

    Mayo
    1 pkg tofu (silken is better but any kind will work)
    1 tsp salt
    1 tsp splenda
    1 1/2 tsp vinegar.

    blend in blender. Hint: add a little bit of dijon for an extra bit of flavour.


    Cream Cheese (from veggietable.allinfo-about.com)
    1 c. tofu
    1/4 c. cashews
    1-2 Tbsp water
    2 tsp splenda
    1 tsp salt
    1/2 tsp pepper.

    Drain tofu. Mix all ingredients in a blender, 1-2 minutes our until smooth. Put in a covered container and refridgerate overnight.

    Yeild: 1 cup. Use within 4-7 days.
