red potatoes?!

  • was wondering if anyone had any suggestions on what to make with some of those little red potatoes. i was hoping i could find a low fat way of making them up that is equally yummy! any ideas and/or suggestions would be much appreciated!
  • I sometimes dice them up, spray them with Pam or I Can't Believe It's Not Butter, and toss with a packet of onion soup mix, then bake for anywhere from 45 mins to 1 hour. It might be too hot to have the oven on in N.C., though (I think it is up here in M.D.).
    You can also boil them, cool and dice and make potato salad with celery and some light or fat free mayo and some mustard (or dijonaise) - better for you than the stuff from the deli.
    I also bake potatoes in the microwave and then top with low fat sour cream and a little salt and pepper.

  • I like them steamed with a little light sour cream and herbs on top.
  • I cut them in half, throw them in a pan and pour fat-free italian dressing all over them and bake at 350 until done.

    I've also thrown them on the grill halved and toss them in fat-free italian dressing afterwards.

    Only sanctioned use of fat-free dressing at my house.
  • I just boil them with the skins on, add a bit off butter and fresh chives

    how long would you steam them for?
  • i love red potatoes...on some days i could eat them plain steamed LOL
