Clam Chowder

  • OK Barb you keep teasing me with this home made clam chowder that you are going to have. Is it in the recipes on here? If it is I can't find it. Please share, please, please, please with sugar on top (oh no wait a minute) with splenda on top.
  • I have a recipe for no-potato clam chowder. It is made with potato starch, though as a thickener and to add potato flavor without all the carbs. Does anyone think 2T for a 6 serving recipe would be OK for P2?
  • Pearshape, I'd use something else as a thickener. There are lots of other "flours" you can get that would be less carby.
  • okay, I'll post this one in the phase 2 soups. It's not a very thick soup but it is tasty.

    It was really good. I'd like to try adding a little zucchini to it but I don't think DH would go for it. It is a great soup in that it takes only about 15 minutes to cook.

  • I make a simplified clam chowder that I like.I use 1 can fat free chicken broth,Slice onion in it.(To taste. I put a lot of onion because I like it) Bring to a boil and cook maybe a minute.Enough to soften onions. Then add 1 or 2 cans of chopped clams broth and all.( depends on whether you like a lot of clams) Bring to a bowl and add fat free half and half. I put enough Half and half to turn soup milky colored. Take off stove.Since it was boiling when you put half and half in it ,,it will be hot without any further cooking. Simple chicken broth, onion, clams and fat free half & half.
