French toast? Pancakes?

  • Hi --

    I'm doing a ketogenic cycle diet right now, and have been below 20 carbs/day fo r three weeks. I have a 'cheat' day coming up on Saturday, and then am slipping into 30 - 35 carbs/day -- almost exclusively from vegetables, with an occasional fruit.

    One thing, though.

    I'm dying for pancakes or french toast. I need something sweet that doesn't taste like chemicals (eg, atkins breakfast bars). I have some of that zero calorie maple syrup stuff, and i want to add it in, because I'm totally missing my breakfast foods (besides eggs).

  • CarbSense has a LOT of good recipes. And I like their mix better than Atkins!!

    Guilt Free Pancakes

    Chef: Jim Lippincott

    1 cup Carbsense Zero Carb Baking Mix
    2 eggs, beaten
    1 cup water

    Whisk together three ingredients until smooth. Pour pancakes onto hot griddle (about 400 degrees). Cook about 4 minutes a side or until golden brown.

    Yield: 6 pancakes.

    Net Carbs: About 0.5 grams per pancake.
