The barbosdietkitchen.com site has lots of recipes listed and you can search for "crockpot" or "slow cooker." I've also been enjoying the WW "Slow Good" cookbook. I picked mine up at a meeting, but you could probably order in online.
Autumn Vegetable Minestrone (1 Point)
2 14.5 oz cans vegetable broth
1 18 oz can crushed tomatoes - undrained
3 medium carrots -- chopped (1 ½ cups)
3 small zucchini -- cut into 1/2" slices
1 medium yellow bell pepper -- cut into 1/2" pieces
8 medium green onions -- sliced (1/2 cup)
2 cloves garlic -- finely chopped
2 cups shredded cabbage
2 teaspoons dried marjoram
1 teaspoon salt
1/4 teaspoon pepper
1 cup uncooked instant rice
1/4 cup chopped fresh basil
Mix all ingredients except rice and basil in a 3 ½ to 6 quart slow cooker. Cover and cook on low heat setting for 6 to 8 hours or until vegetables are tender. Stir in rice. Cover and cook on low heat setting for about 15
minutes or until rice is tender.

That crockpot pepper steak is AWESOME on tortillas (like a fajita). It doesn't say above how many servings are in it, but I found on another site that there's 6 servings in it..... unfortunately, this was AFTER I had about two servings for dinner already! *sigh* (although, I only had 1 tortilla, so that helps!)
I like to make sausage and peppers in the crock pot. I use the turkey sausage that are 4 pts each. I just put peppers and onions in the crock pot with the sausage (I do grill or broil the sausage first so they don't turn to mush in the crock pot) and add a can of diced tomatoes. My kids like it with pasta. I put mine on the 1 pt rolls and have a big salad with it.
