Surprise Party May 1

  • Hi! My DH is 50 this week and I'm throwing a surprise party. I've tried to come up with a menu that I can eat as well as everyone else. I'm on phase 1. Here's what I plan:

    grilled marinated chicken
    grilled marinated pork loin
    Potato salad (for the non-dieters)
    Broccoli salad
    Spinach & White bean salad
    Veggies and dip
    chips and salsa (non dieters)
    Cake (strawberry -- I don't like it!)

    the usually drinks...

    How does that sound? I tried to stick to more mediterrean salads because they use phase 1 ingredients. I could also fillup on the veggies and not miss dessert.

    What are you going to marinade in? I always struggle with that!
  • I borrowed my mother's Mediterranean diet book. There's a Tuscan chicken recipe that is olive oil, garlic, oregano and rosemary. I've used it before and its great. I'm going to pound the fillets really thin so they cook quickly and freeze them in the marinated. Defrosting allows all the good flavor to soak in. It works really well with any kind of marinade or brine for that matter. Brining has sugar in it though.

  • Yum! You could even try a mock potato salad (with cauliflower instead of potatoes) and see how that goes over.

  • Yeah, I sort of have a food business as a side business. I've done lots of catering too. This one will be tough because it will be under his nose. Gonna be hard to decorate a birthday cake with him around...
