Taco Spinach Salad

  • 8 cups spinach, washed, patted dry, and torn
    2 green bell peppers chopped
    2 cucmbers, sliced thin
    2 tblsp. olive oil
    2 cloves garlic
    1 pound ground beef
    dash of hot sauce
    1 pound cheddar chopped (large grates is fine)

    In a large bowl, combine the spinach, peppers, and cucmbers, Toss and set aside.
    in a small frying pan, heat olive oil and garlic. Add ground beef and saute until brown.
    Remove from heat , top with cheese and cover until cheese softens and begins to melt, about 2 minutes
    Quickly add to salad mixture and serve immediately.

    Can be served with 1 tblsp sour cream or 1 tblsp. salsa
