  • 11 Months to Christmas!

    Breakfast: Oatmeal made with skim and 1/2 cup homemade oatmeal cooked in

    Lunch: Whole can of Progresso Lentil Soup

    Snack: Chocolate Banana smoothie (Swiss Miss packet, banana, 1 cup skim, 2 ice cubes)

    Dinner: Core Chile with sirloin (undrained ), Core cornbread and a little Smart Balance (count points)

    Dessert: Not sure yet. Might be popcorn if patio door installation is stressful!
  • B: malt o meal with banana, skim milk and Splenda (breakfast of champions!)
    L: leftover pork chop with sauteed apples and sauerkraut (mmm!)
    S: clementine, maybe a diet soda
    D: hamburgers (sans bun), oven fries, some veggie

  • Tuesday's Tummy Fillings
    Here's what's going down.....

    Breakfast:
    1 packet plain instant oatmeal
    decaf w/lite cream

    Lunch:
    Garden minestrone soup (can I eat the whole 19 oz can??)
    yogurt
    apple

    Snack:
    banana
    green tea

    Dinner:
    so didn't use the ground beef last night? need to do something with it?
    Maybe meatballs or a meat sauce wveggies over whole wheat pasta
    tossed salad w/olive oil dressing

    Snack:
    decaf w/cream (1)
    popcorn if required!

    That should do it???

  • Thanks a lot for that Christmas reminder, Vickie! You guys probably don't know it, but I'm an internet shopper extraordinaire. I've already bought Christmas 2005 for my mom, my MIL, all the nieces and nephews, both of my SIL's birthdays, and both Mother's Day gifts.

    Okay here's my food for today:

    B: egg cooked in Pam, glass of milk
    Sn: banana
    L: baked potato (adding olive oil) with FF sour cream and FF cheese
    Sn: (if needed) pineapple or maybe popcorn
    D: leftover roasted chicken, corn, and a big ol' salad with Kraft Free 1000 Island
  • Kathy, I thought I was an advanced shopper. I like to internet shop also. I'm a BIG QVC shopper. But Girl, you put me to shame! I don't have one Christmas present purchased yet for next year.
  • Vickie, I shop every day. And every day there are boxes arriving. And every day my DH says "STOP IT!" and every day I say "but it's all for gifts" (well except for the stuff I buy for myself) ... but when it's 75-90% off, it's a shame not to buy it and put it up!

    Hi There... I'm new to this, I've been reading the forums for a couple weeks and have been on core now for 3 weeks.. my next weigh in is on Thursday! Not really looking forward to it! Anyway, I was wondering Vickie, how do you make core cornbread? I love trying new, EASY recipes that my skinny fiance would even like Thanks so much, I can't wait to get to know you all!

  • Here's one of the cornbread receipes. This one is drier like traditional cornbread. I used 1/2 cup of Splenda. This went real good with Core chili. My fussy Hubby liked it with a little Smart Balance on it.

    CORE CORNBREAD

    1 1/2 c. yellow cornmeal
    1 1/2 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tps. salt
    1/3 c. Splenda {up to 1/2 cup if you like it sweet}
    1c. fat free yogurt
    1/2 c fat free sour cream
    1 tbs. oil
    2 eggs

    Mix dry ingredients in a medium bowl. Mix liquid ingredients in a small bowl. Gently fold the wet into the dry. Pour into a 9" deep dish pie plate or a 9" square pan that has been sprayed with Pam.

    Bake at 375 degrees for 25-30 minutes or until the edges are a golden brown and a toothpick inserted in center comes out clean.

    Cut into 8 wedges.
    Flex Points: 8 servings @ 2P each

    *HINT: an idea for something different would be to omit one egg & stir in a small can of chopped green chiles.
  • B: Peanut butter and jelly sandwich (1/2 Tbl. PB & 1/2 Tbl. Simply Fruit Strawberry on 2 slices of Sara Lee Delightful Wheat) - 3
    Skim milk

    S: 18 grapes

    L: Chicken meatloaf (or poultry loaf?)
    Roasted green beans
    Brown rice
    Grapes

    S: Oatmeal bake w/apple & raisins
    Tea

    D: Maybe steamed shrimp & cocktail sauce and salad and some kind of carb. Weight training and cardio tonight, so acticipate lots o'hunger.
  • Here's the other which takes a little more time but is VERY yummy and uses your healthy oils.

    Core Sweet Corn Cakes

    1 1/2 cups corn meal
    1 cup plain FF yogurt
    1 teaspoon baking powder
    1/2 cup water
    1 egg
    1/3 cup frozen corn, thawed
    1/2 cup Splenda
    1/4 teaspoon salt
    2 Tablespoons good oil (this would be your good oil for the day if you made 6 cakes and ate 2 cakes)

    Mix yogurt, water and egg together in bowl; add in cornmeal, Splenda, salt and baking powder and stir together until batter is moist.

    Let batter stand for 15-20 minutes. Quickly fold in corn. Heat frying pan over medium heat and warm canola/olive oil. Add batter in spoonfuls. Cakes should be about 2-3 inches around. Let first side cook until tops look dry around the edges; turn and cook the other side. Makes 6-8 cakes.

    Next time, I think I will add a bit more corn.

  • Piggy backing on Vickie's CORE Cornbread recipe, I add a can of drained whole kernel corn and seeded jalapenos and make in muffin pan w/muffin liners for individual servings. So good, I think someone else adds FF cheese.

    Thanks Vickie for the cornbread recipes! I was wondering what to do with that yellow stuff! (I did make some cornbread hot cereal for breakfast the other day - remember having that as a child!).

    Just wondering - do those recipes come out pretty sweet? I think I might prefer the cornbread more "savory"....so can I omit the splenda and add other stuff?

    Any suggestions greatly appreciated!

  • Froufy: Adding only 1/4 c of Splenda and chilies or peppers achieve the savory need. Adding spices and/or ff cheese is supposed to be good. With CORE I'm finding how fun it is to experient with different flavors, spices, herbs, etc. Hope this is helpful!
