I made this 'stuff' for Thanksgiving dinner. I made the full fat version, but wondered if it could be used with SBD for desserts.
COTTAGE CHEESE - LIME JELLO SALAD
1 (8 oz.) sm. curd cottage cheese (FAT-FREE)
1 sm. size lime Jello (SUGAR-FREE)
1 (6-8 oz.) can crushed pineapple (FOR PHASE 2)
1 (8 oz.) Cool Whip (FAT FREE)
Nut chips, if desired
Mix cottage cheese and lime Jello (dry) in the blender until smooth (pudding consistancy). Add crushed pineapple (drain off all juice). Fold in Cool Whip and chill 1-2 hours before serving.
It was good! I didnt want to post it to the recipe section until I knew if this was an ok SBD recipe
Looks fine to me for Phase II.
Are you sure pineapple is allowed even for phase 2? I thought it was too high GI and I don't see it listed in the phase 2 food list. If you do use it, make sure your pineapple has no added sugar.
Oh dear! Did I goof twice in one day? It is high GI but then so are bananas. Hmmmm. It's on Page 79 of the Guide as "limited" so once in a while should be OK.

So this is ok for Phase 2, but not phase 1? Why is that? If you left out the pineapple and even nuts wouldnt it still be ok for phase 2? Just curious.
Without the fruit, it should be okay for phase 1. Keep in mind that nuts are limited and I believe Cool Whip is limited to 2 TBSP a day but I'm not absolutely positive.
Jello is allowed on Phase 1 but SF pudding has to wait until phase 2 because of all the starch. Since yours uses Jello, you are fine!
