Good Banana Bread Recipe?

  • Does anyone out there have a good recipe for Banana Bread?

    I'm looking for something that's decent on the calories and fat (or can be modified to be).

  • 1 1/4 c. white all purpose flour
    1/2 c. whole wheat flour
    2 1/4 tsp. baking powder
    1/2 tsp. salt
    2/3 c. sugar
    2 egg whites
    3 tbsp. canola oil
    2 tbsp. sweet milk
    1 tsp. vanilla extract
    1-2 bananas, mashed
    Mix dry ingredients. Mix liquid ingredients. Combine. Fill greased (Pam) muffin pans 3/4 full and bake 350 degrees for 20 minutes. If making a loaf, bake 45 minutes to an hour. Serve warm. Makes 12 muffins or 1 loaf.
  • In small bowl pour 3 1/2 tablespoons Carnation milk, add 3/4 tablespoon vinegar. Put to the side and let stand.

    In a large bowl mix:


    1/2 c. applesauce
    2 beaten eggs
    2 lg. mashed bananas and mixture of sour milk (from above)
    Mix and then add:


    1 c. sugar
    2 c. flour
    1 tsp. baking soda
    Pinch of salt
    Grease and flour pan. Bake at 350 degrees for about 1 hour
  • This is a little different - but is delish and nutrish

    Banana - Apple Bread

    Ingredients
    1/2 cup reduced-calorie margarine
    Sugar substitute to equal 1 cup sugar (I use Splenda)
    2 eggs
    1 3/4 cup all-purpose flour (I use whole wheat)
    2 3/4 tsp baking powder
    1 cup peeled, coarsley chopped apples
    3 medium bananas, chopped (not mashed)
    Pam cooking spray

    Preparation
    Cream margarine in a large bowl; gradually add sugar substitute, beating at medium speed until light and fluffy. Add eggs and beat until thick and lemon coloured. Combine flour and baking powder; add to creamed mixture, mixing well. Fold in apple and banana. Spoon batter into a loafpan coated with cooking spray. Bake at 350 for 65 to 70 minutes or until a wooden pick inserted in centre comes out clean. Cool in pan 10 minutes; remove from pan and cool completely on a wire rack.

    Serving Size: 1 (1/2") slice

  • im actually looking for a pumpkin bread recipe that isnt bad on calories/fat or can be modified?? I looooove pumpkin bread and saw some recently,.. i wanted some sooo bad:-(
  • Last month, I found a regular zucchini bread recipe and I modified it to make it SBD friendly. It was pretty good and I used 100% whole wheat flour and no white flour. I would say the best thing to do is check out some of the recipes for whatever kind of bread you want then experiment. Use splenda instead of sugar. Use olive oil, I can't believe it's not butter and no sugar added applesauce instead of butter. Use 100% whole wheat flour instead of white flour OR use some whole wheat flour and some white flour.
