Veggie Square Pizza

  • This is my mom's recipe that I converted to South Beach due to a serious craving. She makes these at every party and gathering and they are always a huge hit, at least with me! Try them and let me know what you think.

    Veggie Square Pizza

    WW Pizza Crust (Pita Bread will work as well)
    8 oz Light or FF Cream Cheese
    Light Ranch Dressing or Ranch Dip Packet SB Safe
    3 tbs Sour Cream
    Fresh Veggies of your choice
    I suggest Carrots, Tomatoes, Cauliflower, Brocolli, Mushrooms

    1. Bake your pizza crust and be sure it's docked. Wait for it to cool.
    2. While you're waiting mix 8 oz cream cheese with 3 tbs sour cream with a hand mixer until blended well.
    3. Add a few tablespoons ranch dressing or ranch seasoning to taste.
    4. Chop up your uncooked veggies into small bite size pieces.
    5. Spread your creamy mix onto your now cooled crust.
    6. Pile high with veggies and cut into squares!

    This tastes great fresh or even 2-3 afterwards. Great for a snack at work or with your lunch. For those of you who don't dig veggies as much as others, chop them really fine and pile them high. You're getting great vitamins from the raw food and the fiber of the wheat will satsify you!
  • I have a friend who makes something similar to this only she uses non SB friendly crust. I'm excited to try it with a ww crust. I think I'll make my own from scratch.
