Crab Cakes

  • Ok I just wing this most of the time but here goes........

    1 lb lump crab meat (make sure to check for bones! )
    1 1/2 ounces onion diced
    1 1/2 ounces red pepper diced
    1/2 c. mayonnaise
    3 tbs fresh chopped parsley
    1/2 tsp Old Bay Seasoning
    1/4 Panco Bread crumbs just to coat the outside a little. Doesn't add much.
    You can also use low carb bread crumbs if you want.

    Serves 3 makes 6
    Carbs 5, Fiber 1 per serving.

    Now the roasted red pepper sauce is easy.

    I buy a jar of roasted red peppers. Take one out and dry it off a little. Then I put it in my blender with about 1/2 c. mayo and a tsp of chili sauce. Blend until smooth. WALA! That's it.

    Makes about a cup with only a trace of carbs per serving....I just use a tablespoon or so with each crab cake.
