fudgicle and peanut butter dessert

    i know I saw a post for a fudgicle and peanut butter dessert that is ok for phase 1. I think it has cool whip in it. Anyhow - i just searched through the posts and I can't find it anywhere. Was this a chocoholic dream or does this really exist? I LOVE the ricotta creme desserts (its all i can do not to eat them continuously - they are extra good if you stick it in the freezer for a few minutes to make it extra cold and then add a little cool whip on top) but I need to mix it up a bit.

  • South Beach 'Peanut Butter Cup'
    Serves 1
    Ingredients
    1 no sugar added fudgsicle 1-2 tablespoons peanut butter 1-2 tablespoons light frozen whipped topping or whipping cream
    Instructions
    Take a no sugar added fudgsicle and scrape it off the stick (microwaving it for about 15 seconds helps). Then add 1-2 tablespoons of peanut butter and 1-2 tablespoons of light frozen whipped topping or whipping cream. Mix together and enjoy.
  • I like to make these with SF chocolate pudding. I think the cook and serve turns out much better than instant. These are very rich, so I usually only use about 1/3 cup pudding and a tablespoon of "natural" peanut butter. Yum!

  • I made the South Beach 'Peanut Butter Cup' recipe I posted before for dessert tonight. Oh my gosh, I have found the dessert that will keep me happy forevor!
  • i made it the other day too. its excellent! I still am obsessed with the ricotta cremes....but the peanut butter cups come in a close second!!
  • And this is OK for Phase one? Even if you've already had a serving of nuts for the day?
  • yup its ok for phase one...just count the fudgicle calories towards the 75 cal maxium of sweets. (45 cal. in one pop). I think though if you already had a serving of nuts, you can't also have this treat...but hey - i hope someone writes something different!
  • Hmmm, now I'm wondering if I can have both a few nuts and a peice of celery with peanut butter in the same day. The chesse snacks are so boring.........
  • I love the peanut butter dessert!!! My only problem is that it doesn't make very much! I worry about it setting me up for an all-out pig out session!
  • hmm - well what i do is...instead of the two tablespoons of peanut butter you can have ( i know the book says one but the list posted on this website says two, so Im going with that!!) , I have one tablespoon and then if i want regular nuts later, I just cut the normal serving size in half. I find it more satisfying sometimes.
    Ya - the dessert, although good, is not that big. sometimes I'll have that...and then later on i might still have my ricotta creme. those are quite filling I think. they are really good if you mix in some cool whip and then stick it in the fridge til its nice and cold. i let it freeze a little the other day and it was sort of like ice cream....kind of sort of....

    I tried the riccotta dessert once and did not like it. You make it sound so delicious. Perhaps I screwed it up. What type do you make. I would like to try making it again. Let me know your secret.

  • well, I know some people don't like the texture of it...so if it's that for you...I hear the pseudo cheesecake receipe on the receipe board is supose to get ride of the texture...but I have yet to try it. I is supose to be good though.
    Anyhow -
    I take 1/2 a cup of Part skim ricotta or Low Fat(if i can find it..its very hard to find). Mix in 1/4 teaspoon of vanilla (im not crazy about the other flavors the book suggests) and if you like chocolate, mix in 1/2 a teaspoon of unsweetened cocoa powder. Then I add 2-3 splenda packets. I find that adding 1 or 2 TB of light or FF cool whip and then mixing it all together, makes it more creamy.
    then I throw it in the freezer for maybe 5 minutes or so, and its great. Nice and cold! I think it's refreshing. But maybe I'm weird?!
    The other day I left it in for @20min, and it started to freeze a little ...it wasnt amazing, but it's an ok substitute for icecream.

  • I like the ricotta dessert alot better doing the almond one rather than the mocha one, even though I'm a huge choco freak. So if I want choco I do the SB peanut butter cup and if I want something else I do the almond ricotta. The ricotta with orange extract and choco powder is also pretty good.

    Mmmmm, I'm hungry now.

    I also noticed that Polly-O brand of Ricotta is much better than some other brands. I bought Americas Choice once, anbd the texture was GROSS!
