Herbed Salmon or Trout Fillets (Phase I)

  • This is from The Canadian Living Cookbook and is excellent and I don't like fish! It works equally well with ff sour cream or ff yoghurt and can be done with other types of fish as well.

    Herbed Salmon Fillets

    ½ cup ff or lf sour cream or yoghurt
    2 T. butter melted I used olive oil
    2 tsp minced onion
    1½ tsp dried dill or 2 T. finely chopped fresh dill
    ¼ tsp dried thyme
    ¼ tsp salt and pepper to taste

    1 - 1½ lbs salmon or trout fillets, skin on.

    1. Mix together first 6 ingredients in a small bowl. Can be done ahead.
    2. Season fillets with salt and pepper to taste and place, skin side down, in a single layer in a lightly oiled baking dish. I used foilwrap on a cookie sheet.
    3. Spread reserved mixture over fillets.
    4. Bake at 425º for about 12 minutes.

    Serves 4.
