My Beef Stew - Phase I

  • I think this is a great stew to have...I don't really know amounts, but you'll get the idea.

    Ingredients:

    1 package lean stew meat (a pound? I don't know how they come, but the standard size)
    1 onion, chopped large-ish
    3 gloves garlic, sliced
    1 large tin of diced tomatoes
    15 or so mushrooms, quartered or halved so about same size (I use cremini)
    lemon juice
    salt and pepper
    1 tin green beans well drained and then drained again
    beef broth (low sodium, ff)

    Take the onion and place in large pot heated with a little olive oil. Cook for a few minutes with some salt and pepper, add meat, garlic and lemon juice (I have the kind in the container, a few squirts). Brown meat. Add mushrooms, cook for a bit, if liquid comes out of mushrooms, cool until mostly evaporated. Add a little beef broth (or wine) to scrape bottom of pan, add more broth to cover the meat mixture. Put in the entire large can of diced tomatoes. More s & p and any other seasonings you like. Cook for one hour at a low bubble.

    After an hour has passed, take the green beans and dump them in. Season again with more s&p, whatever else you feel like. Cook for thirty more minutes at a low boil.

    Enjoy with some lf cheese slices.

    This makes a lot, has really nothing we aren't allowed on the SBD, and is FILLING.

  • Ruth, I think it actually makes more like five servings, but I do use really lean beef, and then I trim it again once I get it home, I probably throw away literally about 1/4 more of the container. But it's never even remotely fatty and I don't drain the meat, so...

  • DH won't eat mushrooms, so could I use yellow squash and zuchini instead?
