veggie SBD menu planning

  • Someone (Jennifer?) was asking about vegetarian meal planning on SBD.

    Today for instance, I had--

    Bkfst--oatmeal and soy milk
    Lunch--couscous and chick pea salad with tomatoes
    snack--that low carb yogurt--made by Dannon? Can't remember name.
    dinner--tofu and stir fried veggies--no rice
    snack--cashews




    A favorite salad I like to have ---even for an entire meal, is:

    Salad greens, topped with small amt bleu cheese, and some pecans, (small amt apple chunks if desired) and dressing made with 2 TBSP lemon juice/two TBSP oil--sesame works/ dash salt/ 2 packets splenda. I get an amish bleu cheese since I can't find organic bleu cheese and I feel Amish is more likely to be 'organic'. I don't use much--it packs a lot of flavor!
