Butternut Squash

  • Hi All,

    Just love this variety of squash. I have seen other varieties of squash on the lists but not this one. I eat it quite often. I mash it and use it in place of my mashed potatoes. Is this squash a nono I have read about Spaghetti Squash and have not tried that one yet. Read that it can be used sometimes in place of acutal "real" spaghetti. Anyone tried this stuff yet?

  • I havent tried the spaghetti squash yet BUT I want too!!!!!! I just cant find it anywhere! Sorry I cant help you.

    Yep, My hubby & I have it all the time. I make sauce like I always do and cook up the chicken sausage with feta & spinach adding it to my sauce and the spaghetti squash I cook in the microwave (I followed Jennifer's[3FC's] micro directions). My hubby works for all the grocery stores in Ohio, so I don't have any problems getting it... if it's not at one store, he seems to find it at another. Although, he did say that some of the store managers were having problems keeping it in the stores with the high demands of it now. I also use it in place of Hashbrowns for breakfast & make Omlets with it. It has a bit of sweetness to it - yummy! But then again, I have always enjoyed all kinds of squash.

    Hope you are able to get it somewhere. Maybe go to your produce manager or store manager and ask...

  • On Phase I, the only allowed squash are zucchini, yellow and patti-pan - the "summer" squashes. Butternut, buttercup, acorn, pepper squash are all the same type and allowed on Phase II. Pumpkin is a no-no because it has a very high GI.
  • Thanks Ruth...I'm on Phase II so I'm thrilled I can have the butternut squash. I am also going to try some of the spaghetti squash recipes.
