Chicken Salsa Soup

    Here's a really quick and easy soup I threw together
    yesterday._ It came out absolutely yummy, and I think the
    carbs are reasonable although I didn't work out the numbers.

    Chicken Salsa Soup
    ================

    1/2 cup chopped onion
    a little bit of good olive oil
    squash:_ one very large sunburst squash or 2-3 zucchinis,
    sliced up
    1/2 cooked chicken, or 2 cooked chicken breasts
    1 qt chicken broth
    1 pt chunky red salsa
    1/2 pt green (tomatillo/cilantro) salsa
    1 can Eden Soy black soybeans, rinsed and drained

    Saute the onion and squash in the olive oil in a 4 qt
    saucepan until onion is translucent and squash is almost
    cooked.

    Shred the chicken meat and discard bones._ Add with all the
    other ingredients to the pot._ Bring to a boil, skim foam,
    and simmer just a few minutes until the squash looks cooked.

    Good served with some sliced avocado on top, and cheese
    crisps or Keto Corn Chips on the side.
