Easy Collard Greens

  • I'm so determined to do the Mediterranean way of eating, I've even resorted to trying things I've never eaten before... collard greens, never had 'em, never wanted to... but to my huge surprise, these aren't bad... still, I think it's an acquired taste... you might or might not like them...

    Easy Collard Greens

    Prep Time - 5 min.
    Cook Time - 20 min.
    Servings - 4

    Ingredients:

    2 teaspoons bacon fat
    1 tablespoon extra virgin olive oil
    2 tablespoons onion, chopped
    1 large garlic clove, minced
    2 pounds collard greens, tough stems discarded, leaves chopped
    2 tablespoons dark sesame oil
    Pinch crushed red pepper flakes
    Salt, a couple of pinches
    Sugar, a couple of pinches
    Barbecue sauce, optional

    Method:

    1. Saute onions & garlic in fat & oil: Use a large skillet with a tight fitting cover. Melt bacon fat & heat olive oil on medium heat. Saute onion until transparent, a couple of minutes. Add garlic & cook until fragrant, about 30 seconds.

    2. Cook the collards: Mix in the greens, sesame oil, pepper flakes, salt, & sugar. Cover & cook until tender, 8 to 15 minutes. (Note: young collard greens will cook up relatively quickly. Older greens may take upwards of 45 minutes to tenderize.)

    If you want, serve with barbecue sauce.

    Note: Bacon fat is used here primarily for flavor. Bacon fat provides an excellent balance to the natural bitterness of the collard greens. That said, you can easily skip the bacon fat & just use a little more olive oil.
